Aaaaaah, the joys of leftovers - my house smells sooooo good right now. I have the remains of two turkeys (see expanded entry for an explanation) and two gallons of water happily bubbling away in a huge stockpot on my stove. This will later today become Glorious Turkey Soup!!
Since we'll have so much, I told some friends that if they want some, just pop over with a Tupperware and I'd hook them up. Heaven knows I don't have the freezer space to store that much soup.
The 10lb. turkey I got from work thawed a lot more quickly than I thought it would, so it had to go in the oven Tuesday night (I also bought a 3-pounder for the actual day). I didn't put the probe thermometer in it (first mistake), didn't set the timer (second mistake), and trusted the person in the house with the wicked head/chest cold (i.e., can't smell ANYTHING) to pull it in a timely fashion while I was shopping for extra groceries (third mistake).
He forgot about it until I got home from shopping and asked about it. Crap. We pulled it and inserted the probe. Oy. 192 degrees in the breast. Oy. You're supposed to pull it at 161 and let carryover heat bring it to 165. Oy. Dry turkey. BUT... I got an extra quart and a half of gravy out the deal, AND I have a ton of meat left for a nice, meaty, wonderful soup.
